How are
you doing on your “Eat
from the Pantry Challenge?” Are you
still on board?
It’s
been a few days since I’ve updated, but I thought I should post what we’ve been
eating around here. We haven’t been back
to the store yet since we bought
milk last weekend, so we’re doing well on the money saving part! J
Here’s
what we’ve been eating around the house….
Monday—
My
girls were not at home on Monday and my hubby was working so I just ate what I
could find around the house….definitely not a healthy eating day because I just
snacked all day long.
Monday
evening my husband and I had a meeting to attend where the meal was catered so,
once again, I didn’t have to worry about cooking.
Tuesday—
For
breakfast the girls and I had cereal and fruit.
At lunchtime we had a Soup, Salad and Scripture get-together at our
church, so we ate Taco Soup and salad while we were there.
At
supper time I decided to make some homemade pizza! I didn’t have any ground beef on hand, but I
did have everything to make some good ol’ pepperoni pizza! I like this recipe for the homemade pizza dough because it’s quick and doesn’t require any yeast!
I also
whipped up a quick Apple Dump Cake in my Pampered Chef Deep Dish Covered Baker
using a can of apple pie filling, jiffy yellow cake mix and a stick of butter
which we had all of on hand.
Wednesday (Today)—
For
breakfast we were a little more hungry today so I scrambled some eggs and made
some toast—all of which we already had at home.
For
lunch I reheated the leftover pizza from last night’s supper for the
girls. I had some leftover salad from
yesterday’s lunch at the church.
On
Wednesday nights we always eat at the church so we don’t have to worry about
anything tonight!
I was
looking for some ‘snacky’ food this afternoon and came across some Indiana
Popcorn that I had stuffed in the cabinet for awhile. I was actually shocked at how good it
was! I couldn’t hardly stop eating
it! YUM!
So
basically, this week is going pretty well with the “Eat
from the Pantry Challenge.” We haven’t spent any money from our weekly
budget, so maybe I’ll have some saved to take over to our trip next week!
