Ground Beef Chimichanga--THM S (Low Carb, Keto)

For Christmas I received an air fryer.  I've been scared to use it ever since. But, when I came up with the idea of making a low carb, THM (S) Chimichanga my fears quickly faded.  The excitement of having an on-plan version of my favorite Mexican restaurant meal motivated me to try it.

I first saw the idea in the THM Air Fryer group on facebook.  Someone posted about making pizza pockets in the low carb tortillas which got me to thinking....And the low carb, THM (S) chimichanga was born!

It's quick and easy and oh-so good! 

My husband declared these "better than any Mexican restaurant!"  That sounds like a win to me!


Ingredients:

  • 1 lb ground beef (browned) and seasoned for tacos (I use cumin, chili, onion and garlic powders).
  • Shredded cheese
  • Pico de Gallo (tomatoes, red onion, cilantro, and a teaspoon of both salt and homemade truvia)
  • Your favorite Low Carb tortilla (I use the Xtreme Wellness High Fiber Low Carb--only 50 calories)


Now, just build the chimichanga:

Take your low carb tortilla and fill with ground beef, pico and cheese.  Be careful not to overfill so you'll be able to fold closed.

Fold it to close and lay it in your air fryer basket. 

Fry on 390 degrees for 3-4 minutes or until crisp.  

Optional: Top with on plan chili sauce, cheese and extra cilantro....or whatever toppings you desire. Just remember to keep them S toppings to keep this in S territory.  

This would also be great served with a side salad.  Or if your children need a crossover, add some beans or brown rice--spanish style! 

 The possibilities are endless!
