Tortilla Lasagna--Low Carb, THM S

About 7 years ago I came across a recipe that our family absolutely loved! I even blogged about it and shared the recipe.  It’s called Tortilla Lasagna

Over the years, however, our way of eating has changed as I’ve learned more and more about balancing the blood sugar and cutting back on sugar.  If you’ve followed me very long you know I’ve adapted to the Trim Healthy Mama style of eating.  During this time, I’ve been able to adapt a lot of my old recipes to be on the Trim Healthy Mama Plan. 

So, today, I’m sharing Tortilla Lasagna—THM Style!

Tortilla Lasagna—Low Carb, THM S

Here's what you'll need:

·         2 lb ground beef
·         Onion powder, Chili powder, Garlic  powder, Cumin
·         4 12-in LOW CARB tortillas (I prefer the OleXtreme! Low Carb High Fiber with only 50 calories each)
·         2 cans diced tomatoes & green chilies
·         1/2 lb. Colby Jack Cheese.

Cook Ground Beef until brown. I always cook my ground beef in the crockpot.  This also helps keep all the grease from being in the meat.  I just pick up the chunk out of my crockpot and break into up.  But, if you cook yours on top of the stove, be sure to drain it well. 

Season with salt and the above seasonings, approximately 1tsp each.  I just eyeball it.  Stir together well. 
Preheat oven to 350 degrees. 

Layer two tortillas on bottom of the pan.  Top with 1/2 of your meat mixture, 1 can diced tomatoes and green chilies, and ½ of your cheese.  Add another layer of tortillas, then top with the meat, tomatoes, and cheese again. 

Place in the oven for 20-30  minutes or until cheese is nice and melted..  Let cool and enjoy!!
